- About Japanese Sake
-
- How should I store the sake?
-
Please pay attention to “blocking light” and “temperature control.” Before opening, store away from direct sunlight and high temperature/humidity in a cool, dark place. After opening, always keep refrigerated at 5°C (41°F) or below.
- How long does it last after opening?
-
Please consume as soon as possible, ideally within 1–2 days. For Sparkling Sake, carbonation will gradually dissipate even under refrigeration, and the flavor may change.
- Is it safe to drink products with an old production date?
-
As long as they are stored away from direct sunlight and high temperature/humidity in a cool, dark place, there is no quality issue.
- What is the sediment (“ori”) floating in the bottle?
-
“Ori” is umami components that have precipitated during maturation. It does not affect quality. Removing it may alter the flavor, so please enjoy it as is.
- Can Sparkling Sake overflow when opened?
-
Yes. Because it contains naturally produced carbonation from secondary fermentation in the bottle, foam may overflow due to vibration or temperature changes. Chill well below 5°C (41°F), keep the bottle upright, and open gently.
- The carbonation of Sparkling Sake feels weak/strong. Is that normal?
-
Because it is naturally fermented, carbonation levels may vary from bottle to bottle. This does not indicate a quality problem.
- What are the ingredients?
-
Sparkling Sake is made only from rice (grown in Hokkaido) and rice koji. No additives, flavorings, or sugars are used. Please see each product page for details on other food products.
- Do you use any animal-derived ingredients?
-
No. We do not use any animal-derived ingredients, including fining agents, in the production process.
- About Food Products
-
- Where can I find information about the rice variety?
-
We use only rice grown in Rankoshi Town, Hokkaido.
- What is koji?
-
Koji is steamed rice inoculated with koji mold. In sake brewing, koji converts rice starch into sugar, which is then turned into alcohol.
- How can I use koji?
-
It can be used to make homemade amazake, shio-koji, and shoyu-koji.
- How should I store food products?
-
Rice: Store in a cool place away from direct sunlight and high temperature/humidity. After opening, we recommend using an airtight container.
Koji: Refrigerate at 5°C (41°F) or below. Long-term storage by freezing is also possible.
- About Woodcraft Products
-
- What kind of wood do you use?
-
We use hardwoods such as kihada (Amur cork tree), enju (Japanese pagoda tree), and walnut, sourced from the forest on the brewery grounds.
- Can I use a microwave or dishwasher?
-
No, microwaves and dishwashers are not supported.
- Is this a one-of-a-kind item?
-
Each item varies significantly in grain and shape and is essentially one of a kind. Photos are for reference only.
- How should I care for the products?
-
Gently hand-wash with neutral detergent and wipe off moisture with a cloth. The texture will deepen and improve with use.
